Do you need signal when you have crew?

i am planning to launch my first rocket to eeloo. I have set up a lot of relays around Kerbal, Mun, Eve, Duna, Kerbol, Moho, and Dres. But none around or near eeloo. I wonder if you can still control your craft if you are out of the signal reach. I have crew aboard thought. I never went anywhere without relays.

With a pilot you have full control.

Without a pilot but with a Kerbal of another kind and a probe core, you will have all pilot abilities as if the probe was a Kerbal pilot, minus the ability to make and delete maneuver nodes.

If you only have a probe core, you will only be able to toggle SAS, aim at whatever the probe core can aim at (prograde, radial, those buttons by the navball), and go full or no throttle.

This is assuming default normal settings.

Just make sure you have the crew in a command module of some kind, not in crew cabins and Hitchhiker Storages. Those will not give you control.

Just wanted to add that this is actually documented in the KSPedia, e.g. on page 137 on the pdf version here.(*)

You can also see which kind of control you have by looking at the icons in the upper left corner of the flight screen (which are explained on page 136 of the KSPedia document).

(*) As of 7. June 2020. IIRC SQUAD does update the document when they update the KSPedia.
