Hi There - I haven't played KSP in a while and am getting back into it (latest version).

I dislike the current tech progression and mission system (probes should definitely come before people). Are there any career overhaul addons that make the progression and accompanying missions better/more realistic?

Lots.  There is the Engineering Tech Tree, Tetrix (I'm currently playing this), Simplex (simpler version of Tetrix), the Community Tech Tree, and I"m sure there are others.
