How can I make it more stable...

If you want to make your plane stable, try the CoM and CoL indicators on the lower left part of the screen. However, putting them close to each other isn't enough, and you'll have to fiddle with your design until you're happy with it.

If it's twitchy then it's because you've got so many control surfaces on it, try flying it without any wagglers to begin with.

EndlessWaves has a point, you can probably ditch the small control surfaces and one pair of the large control surfaces.

Planes seem to be most stable when the center of gravity is in front of the center of lift, watch out though as the CG will move rearwards as fuel is consumed
