How to setup decouplers on air launch vehicles

If I try and build a Virgin Orbit style vehicle and have the rocket on a pylon under the plane, when I release the rocket the decoupler sticks to the rocket and now I got a rocket with asymetrical drag and uncontrollable. How do I make the decoupler decouple on the other side so my rocket doesnt have the remains of the decoupler sticking out?

If you're attaching the rocket to the pylon, do the opposite. Attach pylon to the rocket and then attach all that to the plane.

Or just rotate the pylon so that it's backwards, but I'm not sure if that'll work.
