I done a solar escape with just ion engines, had about 12 of them and a **** ton of solar panels and xenon gas. It was relatively easy, it just took along time, like 12 hours long. Sadly my that had that save recently blue screen and the save was lost.

You can do a solar escape with only one ion engine, you just have to burn for twenty minutes or so when your as close to the sun as you can safely get.
