I, too, like having "mistake delta-V". In general I shoot for about 8K for around-Kerbin missions and add additional as needed for Mun, Duna, etc...

Depends. Most of my HLVs have ~7km/s dv.

More than enough to take a decent payload to LKO.

My "space" vehicles have a lot of dv, even if I didn't plan it that way: My Orion ripoff Multi-Purpose Crew Vehicle intended for LKO and MKO Ops has enough dv for a round trip to Duna! :P

Exactly what chris says: I design each ship for a specific function. For example, you need 4.6k to put stuff in orbit, so i got several "lifters" that have ~4.8k for different ranges of payload weight. Kerbal engineer redux has been extremely helpful with that

Bit of a strange question. My return lander for the Mun, Minmus, Duna, Ike and Gilly has approximately 7000-7500dv. My Jool omnilander has around 14,000dv for the standard mission profile. But if I wanted to propel a probe at high speed from Kerbol, I expect I could manage at least 18,000dv. I can essentially achieve whatever dv I want at the cost of part count lag and ease of payload operations or maneuvers. So essentially there is no usual amount of delta-v.

I usually just look at the ship and if it looks like it has enough fuel I launch.:P

I'm guilty of this. But I usually overbuild for sake of a safety margin and refine from there.
