I use the Remote Guidance Units the most because they are good on orbital stages that I want deorbited. For manned launches, I use most of them except the 1 Kerbal Lander can and the Mk3 cockpit.

Technically I use more probe bodies than actual command pods, since I can throw them onto almost any design without much concern and maintain control of the ship/launch stage when the crew aren't present. In terms of command pods with life support though, I tend to use the new single seat lander can a fair amount (for landers, obviously), but I probably use the mk-1 cockpit and cupola pod far more due to their high visibility in IVA. The latter especially, since I keep trying to find excuses for throwing one on.

I use more OKTO probe bodies than anything else (OKTO2 since it was introduced), since in addition to using them on unmanned craft, I almost always add one of them to any manned craft I make in case I need to control the ship when the kerbals are all out to lunch.

There's almost always at least one probe core on any rocket I build - even crewed rockets. Being able to de-orbit exhausted booster stages, or deploy parachutes in sequence, is very valuable. This is even more valuable when you're counting your costs and re-using booster stages, and trying to keep low orbits clean.

I haven't done many manned missions recently, but because I'm going through a pseudo career mode, I've stuck to the Command Pod Mk1 (single-seat). Eventually I'll start using the Mk1-2 pod for aesthetics, but booting out one of the crew to minimise casual----costs.

I almost exclusively use probe bodies. I use both remotetech and Ioncross crew support, but I got a network set up around Kerbin so probes need less support engineering. I also try to avoid killing my Kerbals. So everything I make is brought into orbit and assembled via probes, and only when the entire thing is ready to fly I send up the crew.
