oh don't worry, it's very much possible. Thanks to KAS, you can modify cfg. code so that kerbals can pick up anything! solar panels, parachutes, lights, beams, batteries, normal panels! it has become a big part of my space program

for example, here's a surface base floodlight I assembled on the pad

Add the implementation of the "snap to" functions of the VAB and we could really build in space instead of docking. I mean we would still launch the parts into orbit and "dock", but instead of using docking ports the parts - or assemblies if possible, had to be - would merge as if built in the VAB, welded so to speak.

To make this easier the connection points would be predefined in VAB, simultanously marking the points the craft is to be broken up into assemblies which then can be stuffed into a space planes cargo hold or tied to a rocket.

This could open up a lot more interesting missions where a craft failure would not necessarily mean a failed mission. It's like Apollo 13 where the crew had to MacGyver an oxygen filtering system and whatnot.

I can also imagine Mun missions where a lander lands and drops parts of a rover for the Kerbals to assemble on site. It'll like a rover bought from a rover IKEA or something :)
