Haven't watched the video...

From your description I'd say you have too much thrust and not enough control mechanisms. Use fins on low stages that are still in the atmosphere. Use SAS for control out of the atmosphere. Engines with thrust vectoring help a lot in all situations. As I have no idea what your ship looks like I'm just giving some general ship design guidelines.

Downloaded the video and watched it--

All those fins spread out? Move them to the very bottom of the rocket. Also, use moar struts, I can see that center stack wiggling all over the place when you load up, which is probably what's causing your pitch over in the first place.

It's funny, usually people only have that problem with FAR installed :D

Edit: You might check your staging too. Think you have an engine set to light off when you kick off your second asparagus set.
