Were the canisters attached to the capsule or to a fuel tank that got staged off prior to landing? The cans need to still be attached to the vehicle to count.

(Although if the survived reentry as debris they can be recovered separately from the KSC traking station)

If you don't transmit the data, it gets overwritten the next time you make an observation. Also, the mission-end debrief (at recovery) only lists the observations that are were left on board, and not the transmitted ones.

In other words:

You get science credit immediately for transmissions. These are not included in the mission debrief.

You get science credit on recovery (on Kerbin) for untransmitted experiments left on board. These are the only ones mentioned in the debrief dialog.
