What do professions do?

Sorry for probably posting a duplicate thread- YES, I SEARCHED MULTIPLE TIMES- but is there any resource out there that describes what each profession, and leveling them up, even does? At what levels do they get what skills, and what are those skills and how do you utilize them? It appears that the KSP wiki has not been updated to reflect beta yet.

As an example, do I need to be bringing along scientists to collect EVA samples or something? Do they help improve science collected in any way? I understand that engineers can fix things- but what? Wheels and... ??? The game is starting to get complex enough in its own right to warrant a manual ASAP. I miss the old days, when all you needed was an understanding of orbital mechanics :D (Actually, I don't miss those days at all, the game is getting so much better now, but we need better documentation!)

Pilots pilot things. Can't switch on the SAS without one.

Engineers fix things that are broken but not destroyed.

Scientists boost your science yield.

Basically, pilots stop you crashing. Engineers fix what you broke in the crash. And scientists help salvage science points from the failed mission.

A small addendum: you can attach a SAS capable probe core to a single seat manned craft that doesn't have a pilot in it to take advantage of SAS. Just imagine that Bob's control display has a Plexiglas shield over it with "DO NOT TOUCH" in big red letters printed on it.

Engineers fix broken landing legs and wheels. Scientists gain more scientific research points through experiments. Pilots can use SAS modules more than any other of the classes, and as the Research and Development centre grows, the different SAS 'modes' become unlocked, such as adjusting the ship automatically towards the prograde, retrograde, radial, and maneuver nodes. Both the engineers and scientists don't have the same ability as pilots, and pilots and engineers not scientists abilities, and pilots and scientists to engineer's ability.
