If I just want to launch something, I launch it immediately. If I'm going to rendezvous with something in an inclined orbit, I wait until I can launch directly to the right orbital plane. If I want to rendezvous with something in an equatorial orbit, I often wait until I can get an encounter directly after the launch. If I'm going to take screenshots, I usually wait until good lighting conditions.

Why is there no sunset option? If you're launching to rendezvous, launching a little before sunset will tend to have you meeting up with the target around dawn (assuming you fly an optimal ascent). Docking sure is easier in sunlight.

Nah, you have complete control over the rendezvous location, if you don't launch straight into the rendezvous. All it takes is putting yourself in a different altitude orbit (usually easiest by circularizing at a lower altitude than the target), and then choosing the rendezvous location by choosing the burn location. You may have to go around a few times for the timing to work for the encounter, though.

But to each their own. There's always more than one way to do things, which is awesome. :)
