Are you just talking about the cockpit cutaways?

It's the little circular button to the left of the Kerbal portrait windows.

You have to mouse over the portraits for the button to appear I think.

Yep, mouse over the crew portraits, you'll see a small, round, grey button on the left side of the portrait near the bottom. Click on that and you'll get the overlay.
