Build a mobile mun truck. That's what I did, and it took a while. Working with 6 massive wheels and trying to get it to land was difficult, but it was worth the effort.

Build a jetpack-like vehicle consisting of a control seat, and as few parts as possible, and figure out a way to launch a kerbal in it towards the mun.

Learn to mod, make your own fun. Or if that's more time and effort than you want to spend, learn to .cfg edit and see if you can "improve" stock parts to let you do things that would otherwise be impossible. What if you had some really powerful, durable wheels and could literally get from the Munar surface into orbit by "ramping"?

Build a dedicated series of launchers that look similar.

Last time I had my largest successful payload @ 700 tons or something. It was just silly really since I almost always design stuff as efficient as possible, and customize launchers around payload design. BUT, it's fun.

I suggest copying a large fuel tank, editing the weight, and removing the fuel. This way you have a dummy weight to attach w/o messing with DV figures in MJ/Eng.

You may have already done this though.

IMO, bored in KSP means it's a good time to stop playing "stock only". There are a dozen completely new "KSP games" out there just waiting for you to discover them.

You're limiting yourself by saying "stock only". The modding community of KSP in an AWESOME asset (call it self-aggrandization, I help develop/maintain two mods myself), and you'd be wise to take advantage of it to spice things up a little... Bored with standard rocket launches? Try a mass driver! Want to fly around on Eve or Duna? KSP-Interstellar Extended Thermal Turbojets work great for that! (as do Firespitter propellers)

Until 1.0 comes out (which IMHO is going to happen far to soon unless they release another update first- to allow bugs to be discovered/fixed that QA/Experimentals missed, and really ought not to come until they've at least switched to Unity 5 and made a performance/polish pass in my humble opinion...) you can keep yourself plenty busy with mods. I *strongly* suggest giving it a try...
