Is there any way to have a rocket body that accepts probes?

Yah, this is exactly what subassemblies are for. They can be a bit fiddly to use. The main thing to know is that it really matters what the root part is, since that's the only point at which the subassembly can be attached.

So let's say you've built a rocket body that you want to be able to use as a standard booster for various payloads. What you do is, make sure that the part at the very top summit of the rocket (likely a fuel tank or decoupler) is the root part. You can use the re-root tool to make it so, if it's not already. Then you can drag it to the subassembly tab to save.

Huh? All controls are always available in the VAB/SPH and you only need to click on a part (other than the root) to detach it and its sub-tree.

I mean for inactive subtree that's not attached to the current active ship, in other words those part shown in red. A click with no modifier on red parts will choose all the detached subtree regardless of which part inside the subtree you choose, and it won't split the detached subtree further.

And my question is not asking where the option is. I'm asking since which version is it supported - either I haven't heard of it or it's recently supported, and I just wanted to know which one is the case.

Oh man, I didn't even know that this was a possibility.

I've been killing myself trying to get bits of saved subassemblies to fit right, saving and resaving and reloading and switching.

And shift-click on the bit you actually want of the unattached subtree works fantastically well.

 

So there you go: it exists in my version since approximately 5 minutes ago ;)
