Weird launch profile

A BrahMos or P-800 cruise missile maybe? 

 

 

I think Scott Manley did a video on it once too. If I had to guess, they wanted an ejector system so that the main rocket wasn't firing on the ground (potentially damaging equipment) and the missile itself didn't have the aerodynamic authority or thrust vectoring to make the 90 degree turn keeping the missile low to the ground to avoid detection.

For a split second around 00:25 you see the full profile of the missile after the fins deploy, definitely a Brahmos/P-800 (essentially the same thing, probably impossible to differentiate visually without a flag being painted on something)

Cruise missiles tend to use an solid kick stage to get up in the air and get up to speed so they get aerodynamic lift and can run the jet engine, assume an supersonic missile need an higher speed, as other point out you also don't want to climb to high in many settings as this can be picked up on radar.
