Swaying too much

This is exactly the problem that autostruts were introduced to fix.

To turn them on: go into your Settings, and enable Advanced Tweakables.

Then you will need to take the rocket back into the editor, and turn on autostruts for several of your rocket's parts. Autostruts make your rocket much more rigid, by putting an invisible solid connection between two parts.

In this case, I would recommend one autostrut to the Root part in each of the sections between the bendy joints, and one more at the very bottom of the rocket.

That seems like a rather large rocket to put such a little payload into orbit.

It does look like it has multiple stages, maybe its for interplanetary trasfer or something that needs longer duration.

I usually try to avoid comment/judging other people crafts, the game is whatever you want it to be and not the best DV,TWR, cost is for everyone,

some just want to slap their own ideas however crazy/overkill they are.

You are using an elephant to carry a matchbox!

If you dont want to use autostruts, which some may consider a little gamey, consider placing some of those tanks radially - so that the final thing is essentially the same, but much shorter. It will not bend over like that. You can even use actual struts to stiffen the thing together.
