It could always be modded, of course.

If you can't wait, you can get the free version of 1993's "Buzz Aldrin's Race Into Space" from https://www.raceintospace.org/ and marvel at those 26 year-old graphics.  Actually, it contains some pretty neat, original (if small) film and audio clips for the launches and major milestones.

Alternative version... start on different planets and try to take out the other ones planet (the true space race)

Space race with a person? Yes. 

Space weapon race? Only in modded games.

Sure, but it's gunna be fun :)

put multiple colonies on a planet so its harder to get wiped out and have people carpet bombing whole planets with massive explosions guided by rockets (or planes).  Does it get more kerbal?

It's possible they've been planning this as a game feature since day 1.  We just don't know.  Certainly they've built in a few of the components that it would require, such as the physics framework for multiple players and custom-color parts for your whole fleet.

Since the systems in the base game are fixed, it's possible that the AI could be largely "on rails" and you need achieve milestones before the AI does in the race.  I do seriously doubt it's in there, but it may be more plausible programmatically with the base multiplayer features already in place.
