I've seen in some matt lowne video's that he can move parts really far from the core vessel, but i cant find any mod that does this. Is there some setting in game or mod i haven't found that unlocks the placement of parts?

Using the offset tool?

If yes, just while you are dragging and reach a limit, hold Shift and you can move it anywhere you want
