I've wonder does devs give us more opportunity to earn more science point via contracts? I've used cheat mode to have proper Apollo-Saturn launch stacks, i added some science points no unlock appropriate techs

So how o could get a few thousand points to get to the Apollo-like big parts

The Kerbolar system is littered with science opportunities. The tightest point in progression for me was the Duna mission, but I still did this with a Kerbal land and return with the limited parts available. There are a ton of options for ome-way science probes to many places for transmitted returns that ensure you can't hit a dead end. You definitely don't need the tier 4 parts to do this either. Just practice / experience.

My favorite is Eve early strategy. its an rapid closing launch window to Eve at the start of the game, dV cost is high but still cheaper than Moho. So unlock the sniffer and preferable rovers and the sample arm and start sending probes. Each landing give 1000 environmental science and 1200 from the sample arm transmitted. Its 5 biomes near the shore you can get ocean and shallow biomes on land, splash down give very little science.  You also have the discoverables who have an higher science return. 

Gilly is also an interesting target for an small lander. You also get 600 from each atmospheric measurement and much more if returned so leave something with an rover seat to have an kerbal pick up later. 
I also did an manned mission and has 11000 science waiting for an return window from Eve from Gilly and atmospheric.

I rember original KSP I've always want to make something 60's style Apollo but was forced to make all these satellites contract than I got bored 

And than two months later continue on that's save file felt a bit weird

Speaking of look what's I found it's no KSP but cool in my opinion ;)

 

PS but they could make more science contract in game, or the one's about plane flying

For recreating a specific look, just use sandbox mode if that's all you care about.

One thing I don't like is that fairings are to high in the tree, most designs end up with an reduction at the fairing, its an fairing not an corset. first it was 1.25 meter, then 2.5. probably with 3.75 meter too if I use the 5 meter tanks but so far core + 4 side boosters with cross-feed and some small SRB for higher launch TWR has worked for the around 120-140 ton interplanetary ships I tend to fly, but I think I will just dock more of the huge balls to the ship if needed. Think that will only be relevant for Eeloo,
