Solar panels; where should the pivot point go?

The easiest way to learn is to open a stock or mod solar panel in your modeling software and at the same time open their config in a text editor. Compare what you see in one to the other and you will be able to figure out the relationships. Be sure to take note of the X/Y/Z orientation of all empties and meshes.

The problem is that I need the panel to be one sided; I think I have the pivot thing sorted

Most things that can move in KSP rely on specific orientations. That is why you should study other models in the 3D modeler to understand orientations.
