Is it even theoretically possible to mod the kerbals?

The Kerbal models and animations are hard-coded into the Unity assets and the core programming. It's is very difficult to change them, it requires basically remaking part of the game...which is what IG did with KSP2

The Space Ponies mod just puts on a new helmet on the Kerbals. Squad made the helmets and suits changeable, so those are relatively easy to do.

The Kerbal textures can also be changed with Texture Replacer.

Yep, it's just a helmet replacement. When Squad added the ability to change suits and helmets, it opened up opportunities for some...creative uses. :D
