What exactly do you mean with in the void? It seems rather normal to me

Do you mean the straight line? That's how your ship will move inside Minmusses SOI, relative to Kerbin. It will be a hyperbole relative to Minmus itself

Yes nothing unusual I guess : the game is predicting the position of Minmus when you will be there, but it might do it relative to your ship or to the planet : Minmus is a small body, it's hard to get a big encounter as you did, it make the game kind of lost.

Try to warp until you enter Minmus SOI, and see if there is actually something wrong

It would appear so, but ...

I recently got the hang of when getting the intercept to then switch focus to the planet in question, then adjusting from there as well to fine tune my periapsis distance.

You can currently only change it in the config files themselves. Open it in notepad

I had done exactly this.. only I didn't know it. I clicked it by mistake in PrecisionNodes :)
