For practicality, I'd take the ability to not require any sleep, and not to feel the need to sleep. Because it basically doubles the time I have for life.

For coolness factor - complete and total shapeshifting, down to a particle, but with a default form I could subconsciously reform to whenever I needed. Would probably take a ton of time to get any useful sort of control, but that would basically make me immortal (stop aging), invincible (can quickly heal any wounds/whatever), give me strength (shift mass from fat/whatever to muscles), speed (same), and a ton of other stuff. Would require a ton of knowledge in chemistry, biology, physics and stuff like that, but it would be really cool.
