If anyone was wondering, you can tone down fairing snap in their config files.

Honestly though, this has been an annoying little thing for me as I like styling fairing as much as I possibly can and the "0.1" default snap was a bit too rigid for me. Search "snapThreshold" in the config files and you can tweak that to your liking.

While there isn't a separate cfg for that, I suspect if you set the max height to an extremely large value you could get it to separate into less pieces.

But you are still going to have to deal with a few pieces. Or you could just download Procedural Fairings unless you are playing completely vanilla.
