How do kerbals keep sane on decades long missions or "long term assignment". do they play board games, videogames, hang out with other kerbals on board. and for that matter do kebals age, or gain weight, because I can leave one in a chair for a quarter century, and their fine with it and don't need to exercise?

according to the tons of postit in the cockpit with bold "don't touch this" scattered everywhere, they are not allowed to do that much! even a trip to minmus could be a pain as it would at least take two weeks of floating around in the cockpit watching the greatfull emptiness of space.

but be sure almost everytime the almighty Kraken hits, some kerbal may have decided to ignore a sticky note and end up screwing the whole ship

As for the rest, I guess they play board games a lot of the time (no idea how that works in zero-g) and use the ISRU converters to make incredibly strong booze.

They could just use magnetic boards, right? the real problem is with rolling the dice in 0g, no idea how that's gonna work.

It could be contained in a small chamber which can be shaken and has a toggle-able magnet that pulls down the closest side.

The life support system has an intake for the air scrubbers. Attach a hose to the intake for mild vacuum, then hook it up to a tray with a false bottom made of mesh panel (the stuff in the windows of microwaves). The airflow/suction will hold the die to the mesh panel.

I think they amuse themselves just the same as astronauts here one earth. Books, etc.

Well, because new Kerbals arrive at KSC with zero training, and because the Astronaut Complex is incapable of training them, they get their training while in space. As they sit in their pods for days/months/years, they watch instructional videos over and over that teach them to perform the simple, menial tasks required of them (fix flat tires, reload Goo cannisters, etc.). Physical restraints are used to ensure they watch the videos and various chemicals are pumped into them to enhance their retention of the material. The process looks like this in operation:
