Also are their two stages?

The boxy thing that is in the structural part is the fuel plant. The large engines are the descent engines for when it gets dropped off. There are technically 3 stages. Descent, Ascent 1, Ascent 2, and then the command pod.

Wow. Nicely done. If I understand correctly from the film, the three main descent engines remain on the ground with the fuel plant, and there are a bunch of radial engines on the tapered core that do the lifting on ascent. I've tried to replicate in KSP with little luck. It's really hard to get good shots of the MAV, especially of the core stage. It's difficult to tell how many radial engines are on the MAV core, but there are at least greater than five I believe. I'm not sure how accurate you're planning on going with this, but that's what I know about the MAV.

Will the capsule be of similar design to the MDV capsule?

This is correct, as far as I know.

One thing I havent been able to work out, how did they cancel out the torque-reaction from that single rotating ring? Two counter-rotating rings would do it easily, and provide moar room IMHO

Computer-controlled weights in the arms. Probably.
