I'd guess they'd probably just use other organic material. My bet would be vat-grown algae in a nutrient solution to produce a lot of biomass in a relatively short space of time.

No mention of perchlorates though.

IIRC he had access to plenty of vitamins and pills that covered his nutritional needs. The potatoes were just for calories.
