Kerbal Attachment System (KAS) has the kinda stuff you seem to be looking for. I would recommend an additional mod to go with KAS and that is its sister/companion mod Kerbal Inventory System (KIS) as it adds storage items. These two mods were way back when a singular mod. These two mods open up so much opportunity for gameplay.
