Any tricks or mods who help you set Kerbin as an target?

Game works very hard in preventing me from selecting Kerbin as an target for return trips. Its obvious that I want to select an probe landed on Minmus instead of Kerbin if I'm controlling another craft inside an other planet SOI or in inteplanetary space?

Select and focus whatever it lets you, zoom in on that, from there select the body. The additional step is annoying but it's possible.

As The Aziz points out, zoom in. It's incredibly hard for the devs to write code that basically goes like "when selecting an object from outside the SOI it's in, just pick the object that rendered the icon rendered on top, and not the body that defines the SOI" so we're stuck with that.

You can try a trick though: in the map view, use to filter button, click on "clear all" and then only select "celestial bodies." If that filter would actually filter what you see in the map, that would work.

Simply do not prioritize or simply hide crafts then zoomed so far out Minmus orbit is not visible like they do with moons. Going to Jool I have to zoom in on Jool so moons are visible then select Tylo as target so I can set up an intercept trajectory, have crafts behave like this. 

Now the mod flight plan let you select an body who set it as target. Use that mod to create circulation burns
