Another one of my craft, probably my favourite of all time, a stock mobile base with a fully traversable interior, comes with a launch system that will get one of these to the mun/minmus/interplanetary as well as perfectly balanced VTOL engines that the COM never moves away from the COT with. (fuel drains evenly to all 6 engines)

Not an engineering wonder, just a regular SSTO spaceplane, but design-wise I think it's a nice example of what you can make using only stock parts.

I'm using the ltv-45 (with the gimbal), it doesn't fly as far as the real thing (heavy fairings), but it's pretty capable overall.
