Contract expects me to replace Ike with a satellite

That's pretty funny.

However, you don't need to be directly over that site. IIRC the range is quite generous. Just put the satellite just outside Ike's SOI, following or leading Ike around the orbit. If that doesn't work - i.e. if the contract still thinks you're too far diverged from the surface point, then I'd feel no qualms about Alt-F12ing the contract complete.

Though if that happens I'd also submit the save as a bug report.

Ike's SOI reaches up to Jool if we let it!

Ike's SOI extends a specific distance from Ike, about 1000km. It can and does not go any further no matter what we allow.

sorry to be THAT guy, but I feel like I had to explain the joke here. Often times, Ike grabs random crafts in Duna orbit and slings then around everywhere. The joke being that if we give ike even a little leeway, it will start grabbing everything and throwing it away. Also, while KSP's simplified physics model doesn't simplify this, Ike will technically always be pulling on you. Of course, there's a point where it's basically meaningless, but you can never escape Ike, no matter how hard you try.

Yes, as long as you are not inside Ike SOI and in correct orbit contract is completed, Over time however the satellite will catch up with Ike and either crash into it or get flung into solar orbit. 
However once the contract is completed you can do that you want with the satellite, putting it into polar orbit of Ike is one idea.
