How can I downgrade KSP?

I have quite a few mods installed that are currently incompatible with KSP 1.11 (namely ReStock, AVP and EPL. I also have KI/AS, and I have no idea how those will react)

However, Steam (in its infinite wisdom) decided to update KSP to the new version automagically. 

Is there a way I can roll back my version to 1.10.1?

see this post from @linuxgurugamer I used this method to install 1.10 from steam.

Right click KSP in Steam, click Properties > Go to the Betas tab in the pop up window > select version 1.10.1 from the drop down list > wait for Steam to download 1.10.1 again > copy KSP to somewhere outside of Steam’s control > NEVER mod the Steam controlled version of KSP ever again so you never have to deal with this problem again.

Keep the Steam-controlled version of KSP completely stock and if you want to make a new modded game then copy the Steam version, then mod the copy.

Would it have the same effect if I saved my Gamedata somewhere else, deleted the Squad folder, and after installing 1.10.1 again, add my gamedata to the fresh install?

(obviously after backing up my craft and saves)

@Spaceman.Spiff it’s entirely feasible to do that.
