Well, you should launch at or around a transfer window to Jool. You can always timwarp to the next one... And as for fancy orbits, they're not necessary, unless you are on a tight fuel budget, in which case many gravity assists would probably be used, I myself don;t know how though.

That appears to be without landers attached. You can't drain fuel from the landrs, so they equal a net loss of delta-v. I, being a VEEERRRRYYY cautious person, would sugest around 8km/s of delta-v with landers attached. It's doable
