Mods...

They can make or break a game, and I'm lookin' fo' the best of 'em (by the way this is not how I usually talk.) In simpler terms, please tell what the best mods that are compatible for KSP 1.0.5 for an ultra-modded career. As well as ones that are EASY to use.

There are so many good ones!!
Here's a list of the ones I'm currently using which add parts (doesn't include plugin only mods) http://kerbalx.com/mod_packs/20
You can download a .ckan file from that page and give that to the CKAN mod manager (assuming you're using that) and it will install them all for you.

That doesn't include the mods I use that don't add parts, so I'd also recommend;
EVE - for clouds
scatterer - adds v nice atmospheric effects (and now ocean effects) - still a WIP, has some issues but what it adds outweighs the issues 
CollisionFX - sparks and sounds on impacts and tyres screeching on landing (also makes Kerbals sound like squeaky dog toys when they get hitr, but you can disable that!)
Kerbal Alarm clock - a must if you run multiple parallel missions
QuickSearch and QuickScroll - improve the parts list in the editors (I can't be without them now)

I'm not using these currently so don't know how they are in 1.0.5 (I'm guessing fine though) but I've always liked TAC life support and Remote Tech

This question is not specific enough to answer. A quick peek at CKAN alone lists close to a thousand mods, and there are mods hosted all over the place that CKAN doesn't include. You can mod KSP in almost any direction you could fancy, and it would yield a completely different list of mods to get to each result.

You'd be better off first asking yourself what you want from the game. Apparently you already know the first answer: you want to mod instead of the raw stock experience. But how far from stock are you willing/seeking to go? Do you want full compatible or are you tolerant of and capable of dealing with mods less than optimised for the current KSP version? Do you want realism or wacky fun (or something in between)? Are you more interested in rockets or planes (or things that don't even lift off at all)? Is it the building or the flying you crave (or maybe more the exploding)? Do you have lots of time to spend on a slowly growing experience or would you prefer short bouts of instant gratification? What degree of beautification do you seek? How large a selection of parts to build with? Do you want to reenact specific real life space programs? Etc.

Each of those answers comes with its own set of mods, and then each of those can be combined in different degrees.

Mods are a matter of personal preference, do you prefer realism and difficulty or easy less micro management. Do you prefer sandbox or career.. Do you want to make rockets or space planes or stations or bases and so on.

You can check out curse or Kerbalstuff for the most popular mods then look at compatibility for 1.05.

There is also a sticky at the top of this forum (Addons > Add-On Discussions) titled the MOD Docket with some players favorites.

I use close to 40 some mods myself and am not at home to review the list but I use some of  Necrobones suite of mods and some of RoverDudes mods Kerbal Engineer, Connected Living Space, RealChute, Tantares, Tantares-LV, Contares, Quick Exit, Quick Revert,  just to name a few that come to mind.

I see lots of lists flying.  Please share them in The MOD Docket  If you forget the name it is pinned at the top of the Add-on Discussions.  

@TopHeavy11 There are a couple recommended  lists in the The MOD Docket you can check out and see if they appeal to you.  If you end up making your own you can always share it there for others to use.
