Let's see...for someone new to the franchise, I would starting with the first episodes of whatever series would be available. The premise of each series is covered (to various extends) in those first episodes, the quality of the first episodes ranges from good to decent, and it's much easier to decide if you'd want to watch the rest of that series.

Let me give you some names then. For Star Trek (what we call The Original Series), episode: Where No Man Has Gone Before. For Star Trek: The Next Generation, episode: Encounter At Farpoint. For Star Trek: Deep Space 9, episode: Emissary. For Star Trek: Voyager, episode: Caretaker. For Enterprise, episode: Broken Bow. Although I can't really recommend the series Enterprise if you're starting out, it is weaker and tougher to like.

 

For the franchise wiki, it's called Memory Alpha. If you just plot synopsis and reviews, I'd recommend SF Debris' Opinionated Guides (although they are opinionated to humorous degree.)

I agree that The Wrath of Khan is great, but I most prefer the original series.  It's classic. :)

I find the original series unbearable to watch, so be sure to check out something else if you are disappointed about whatever you started with. I enjoyed many of the other series quite a bit, especially Deep Space 9 and Voyager.

My favorite is Voyager. It has the prettiest ship and being set in the most distant future gets the most advanced tech.
TNG has Picard, which is awesome. Also Borg. And Q. And Whoopi. On the downside, Will Wheaton, his mother and Cpt Troi the Obvious.
DS9... that kid can get annoying, and Odo is waaay OP, so what does he do all the time? He solves petty crimes.
Enterprise is slow.
TOS is obsolete. The hand to hand combat is just awful, visual effects are outdated to the point of silliness, dialogue is funny...

Did I mention Voyager is pretty? It also has Janeway and 7.

But seriously, watch it chronologically as they came out. Oh, and skip Enterprise. I hear the fourth season is good, but the rest of it will make you feel ashamed to have watched star trek.

I actually liked Star Trek enterprise, and I don't care what you people say about the intro, it's really good!

Eh, good concept, terrible execution IMO. Oh, and the intro. At least there were a few episodes where they fourth walled the crap out of the intro sequence. That was pretty cool, but it took SOO LOOONG to get there.

I liked Enterprise, too.  It had it's high and low points, just like any of the other series.  (Seriously, people.  The first two seasons of TNG were just bad.  It took me years to get back into watching it.)

The third season was not my favorite.  It completely changed the idea behind the series, and an entire season-long story arc didn't fit the episodic nature of Trek.
