Tethers? Anyone?

tethers have a very important use: It would allow you to secure the needed amount of kerbals for moving/attaching objects which have more than the maximum amount of mass that a single kerbal can lift.

If we’re getting same vessel interactions, could that system be extended to make a basic Eva tether system? (Even better if it makes the Eva pack available as a research item instead of from the start)

You could always use the KAS winches as a substitute for a real tether. I did this long ago before I was comfortable doing EVA work, I could just retract the winch if I got too far away from the craft.

An EVA tether would be amazing! No need to worry about your kerbals floating off when switching between lots of modules!

I dont have the DLC, but a substitute could be a bunch of those snakey joints with an external command seat at the end.  Best part is that it can double as an advertisement for your local used car dealer.
