Save the kerbal AND their vessal.

Have you researched the Claw part? You can use it to grab another craft which then becomes part of the same ship. Getting the thing down through heat damage on re-entry can be tricky, though. And make sure you have enough parachutes for the combined mass.

Recommend using the claw, easiest is to make an rover around an rocket, land and tip over on the wheels and driver over and grab the capsule. Its an benefit to know the capsule type so you can get the height of the claw to come around center on the capsule, remember reaction wheels as you will be a bit unbalanced and you need to lift the nose for liftoff, some legs or robotic helps. You need enough dV to reach Mun orbit and preferable back to Kerbin, and reentry will be an challenge. You could leave an engineer in orbit to add a heat shield and parachutes. or have one integrated into the rover rocket.
Claw, probe core, parachutes, reaction wheels, heat shield, decopler and rocket.
I would launch this with an rocket as 3 stages, first stage with some SRB, second stage to get into orbit, to Mun orbit and start of landing. the rover, can be smart to separate the wheels once flying at lest if you want to try to deorbit with it. and it save weight.
