That is known as an orbital rendezvous and is what I use for rescue missions. It sounds really tricky but once you set up the parameters and it's just a matter of patience and quickly becomes routine. The last graphic in this illustrated guide (Parallel Orbit Rendezvous) is the safest way to learn how to rendezvous (RV). Ideally, if you get your intercept close to 0m you should just drift up to your kerbal, press either [ or ] (this cycles through all objects within 2.2km) and fly the kerbal to the rescue ship. Now I remember all this sounded very intimidating to me when I was first learning so if you have any problems or questions please don't hesitate to ask.

Welcome to the forum @RandomGrape, your question has been moved from KSP discussion to Gameplay Questions. Once you know the process it's easy to get around the system however a mod like Mechjeb can do all the flying for you. If we start with the Mun you can get an intercept by plotting a manoeuvre node that intersects the Mun's orbit about one quarter of an orbit ahead. Don't worry about being too precise, just get the intercept and do the burn. Half way to the Mun create a manoeuvre node but don't play with it yet, right click on the Mun and select focus view. You should now see your path past the mun and you should be able to finetune your course to be super close to the surface. At the Mun periapsis point burn retrograde to get orbit. Going interplanetary is much the same besides making sure you leave Kerbin orbit during the transfer window (the time when it is cheapest on Delta V) and at the ejection angle (the place in Kerbin's orbit you do your interplanetary burn) that is optimum for the body you wish to visit. Many of us use this tool to do the plotting. Once again do a mid course correction burn to fine tune your entry into the bodies sphere of influence and burn retrograde to make orbit.

One thing that stabilised the nose a bit for me was to set the fuel priority to drain the big tanks first (+1). At the moment all fuel tanks drain at the same time so as the LF at the front drains it makes the spaceplane more tail heavy as you fly. I'm also having some issues. -

Well that's an impressive amount of engines and it flies really nicely but I'm struggling to get it to fly faster than 360m/s. Wheesleys, while they have great ISP, are not good for high speeds or altitudes. It looks like around 7700m is the ceiling with all engines burning. I'd say that using rapiers in LF mode only would be a lot better. Also the two nervas are exhausting onto the tail planes and will need to burn for a long time for transfer and capture burns (considering the mass). -
