For a blimp this appears to be somewhat heavier than air.

Welcome to the forum. When I started KSP there weren't any tutorials. Trial and error is a good way to learn.

I'm not clear about what you're asking. After two mated ships separate you are not in control of the one you want to be controlling? Control from here should fix that, as you say. Maybe try switching with the square bracket keys ] and [? Pictures of your craft might help diagnose problems. Also, welcome to the forum.
