Expand The 'hypothesis' as you call it requires that the timespan for random character generation be infinite, either that or an infinite number of characters need to be generated. So far: The internet is 'just' about 35 years old, not infinite. in terms of 'major' things like typing and stuff, humans are inherently not random. Unpredictable yes, but not really random as we're driven by our thoughts (which always have some level of coherence) The internet is not infinite. All of human literature is not infinite. In conclusion, disproving that hypothesis requires several trillion sentient beings, all with completely incoherent minds, typing away for several universe-lifetimes. Also it's really a saying, not a hypothesis.

Expand 'Hope' in that context is usually treated as an intangible concept, while 'dream' is a type of experience. So you can have multiple dreams, but not hopes. Generally. English, being a centuries-old language with little standardization, is complicated. I'm actually not exactly sure when 'hope' is treated as an intangible concept and when it's considered a thought that you can have several of, so I just go by intuition. I'm not a linguist after all, don't take my word as necessarily truth on grammar stuff...
